Inside Huế's citadel lies Tịnh Tâm lake, the Nguyễn emperors' pleasure pond, whose lotus was famous enough to be reserved: its seeds — hạt sen — went to the court, and they still trade at a premium in Huế's markets under the lake's name. Cơm lá sen, sometimes cơm sen, is the banquet dish those seeds built. Nineteenth-century royal cuisine loved food that arrived as theater, and a lotus-leaf parcel opened tableside — steam, perfume, green light on white rice — is theater you can grow in a pond.

The dish survived the dynasty because the trick is real, not ceremonial: the leaf is an ingredient, and steam is how you extract it. Everything else is a competent fried rice, kept a little dry and a little undersalted so the parcel can finish it. Our chè hạt sen puts the same seeds to work in sugar; this is their savory posting. Cut the parcel open at the table — opening it in the kitchen is a small crime against your own dinner.

Day-old rice, always. Freshly cooked grains steam into a pudding inside the leaf; chilled overnight, they stay separate and take the lotus perfume one grain at a time.

Rice and lotus

  • 600 gcooked jasmine rice, chilled overnightfrom about 300 g / 1½ cups dry — spread and refrigerated uncovered so the surface dries
  • 100 glotus seedsabout ¾ cup — fresh if you're lucky; dried need a 2-hour soak and the bitter green germ picked out if present
  • 1large lotus leaf, dried or frozendried leaves need a 30-minute hot-water soak; see the FAQ for where to find them

The fried rice

  • 150 gchicken thigh, diced smallabout 5 oz
  • 100 gsmall shrimp, peeled and dicedabout 3½ oz
  • 4dried shiitake, soaked and diced
  • 1small carrot, in fine dice
  • 2shallots, minced
  • 1.5 tbspfish sauce
  • 0.5 tspground white pepper
  • 2 tbspneutral oil

  1. Step 1: Cook the lotus seeds

    Simmer the seeds in unsalted water until tender but intact — 15 minutes for fresh, up to 40 for soaked dried. Stop before they bloom into flouriness; they should hold their shape in the rice like little chestnuts, not vanish into it.

  2. Step 2: Fry the rice

    Heat the oil in your widest pan, fry the shallots until fragrant, then the chicken until it colors, then the shrimp, shiitake, and carrot. Add the cold rice, breaking clumps with the back of the spoon, and season with fish sauce and white pepper. Fold in the lotus seeds last and gently. Undersalt by a shade — the steam ahead concentrates everything.

  3. Step 3: Ready the leaf

    Soak a dried leaf in hot water for 30 minutes (a frozen one just needs rinsing and a minute in the same water), then wipe it and trim the stem nub so the parcel sits flat. The leaf should be pliable enough to fold without cracking — a torn leaf leaks perfume.

  4. Step 4: Wrap the parcel

    Center the leaf in a bowl matte-side up, mound in the rice, and fold the leaf over in overlapping pleats to make a snug, flat-bottomed parcel. Tie with kitchen string if it argues. The bowl trick gives you a neat dome without wrestling.

  5. Step 5: Steam and open at the table

    Steam the parcel seam-side down for 20 minutes. Carry it to the table whole and cut it open in front of everyone — the escaping cloud of lotus-scented steam is the course before the course, and it only happens once.

Where do I buy lotus leaves abroad?

Chinese groceries stock them for lo mai gai — look for flat plastic packs of folded dried leaves near the dried mushrooms, or frozen leaves in the freezer aisle. They keep for a year in a dry cupboard, so buy the ten-pack; this recipe tends to get repeated.

Can I skip the leaf and just eat the fried rice?

You can, and it will be good fried rice — but the leaf is the recipe. The 20-minute steam pushes a tea-like, faintly bitter perfume through the grains that no ingredient you can chop will reproduce. Without it, call the dish what it is and save the name for the day you find leaves.

Fresh or dried lotus seeds?

Fresh (summer, in the pods, increasingly in Asian-market freezers) are sweeter and cook in a quarter of the time. Dried work fine with a soak — just split one and check for the dark-green germ at the center, which is bitter enough to notice and comes out with the point of a knife.
